Ingredients

Avocado Mousse

  • 500g Coconut cream
  • 500g Pure cream
  • Half an avocado
  • Squeeze of lime juice
  • Melted gelatine

Toppings

  • 60g Coconut ice cream
  • 50g Strawberries, chopped
  • 50g Black sesame cake
  • 10g Toasted wild rice

Preparation

  1. Blitz all mousse ingredients together until smooth consistency. Fill siphon gun with mix, charge with cream charger and refrigerate until needed.
  2. To build the sundae, layer chopped strawberries, chopped avocado and avocado mousse. Add sesame cake on and with toasted rice, then add a scoop of coconut ice cream on top and drizzle caramel sauce over.
