Ingredients
Avocado Mousse
- 500g Coconut cream
- 500g Pure cream
- Half an avocado
- Squeeze of lime juice
- Melted gelatine
Toppings
- 60g Coconut ice cream
- 50g Strawberries, chopped
- 50g Black sesame cake
- 10g Toasted wild rice
Preparation
- Blitz all mousse ingredients together until smooth consistency. Fill siphon gun with mix, charge with cream charger and refrigerate until needed.
- To build the sundae, layer chopped strawberries, chopped avocado and avocado mousse. Add sesame cake on and with toasted rice, then add a scoop of coconut ice cream on top and drizzle caramel sauce over.
