Ingredients
Asian Style Guacamole
- Juice 1 lime
- 2 Australian avocados
- 50ml Soy sauce
- 10ml Sesame oil
- 10g Coriander, chopped
Avocado Poke Bowl
- 1 Australian avocado, cut into ¼
- 100g Rainbow slaw
- 100g Brown rice
- 50g Edamame
- ½ Lebanese cucumber, diced & ribbons
- 10g Pickled ginger
- 50ml Mayonnaise
- 20g Coriander
- 20g Fried shallots
- 5g Seaweed & sesame mix
Preparation
Asian Style Guacamole
- Dice the avocados with a resting rack and add in all other ingredients.
Avocado Poke Bowl
- Place Asian guacamole in the base of the bowl.
- Place the slaw, brown rice, cucumber and edamame beans.
- Cut 1 avocado into quarters, place on top.
- Garnish with sesame seeds, seaweed, fried shallots and coriander.
- Add a little more dressing to finish off.
