Ingredients

Avocado Wasabi Cream

  • 1 Australian avocado
  • Squeeze of lime
  • Pinch of salt and pepper
  • Drizzle of olive oil
  • ½ Tsp of wasabi paste

Garnish

  • Half an apple (cut into little matchsticks)
  • 5 Tbsp olive oil
  • A squeeze of lime
  • Salt & pepper
  • 4 Tostada
  • 8 Tbsp cooked sliced prawns

Preparation

Avocado Wasabi Cream

  1. Put the avocado into a bowl and crush with the back of a fork giving a wonderful smashed texture.
  2. Mix in olive oil, lime juice, salt and pepper and season with wasabi paste for a little kick.

Garnish

  1. In a bowl, combine the apple coriander, olive oil and lime. Season with salt and pepper.

To Plate

  1. Spoon the avocado wasabi cream onto the tostada, then add the prawn meat and garnish over the top.
