Ingredients

  • 10g Mint for garnish
  • 50ml Avocado Green Goddess (see Mitch Orr’s recipe here)
  • ½ Australian avocado, chopped
  • 50g Crumbed Greek feta
  • 20g Peas
  • Watercress for garnish

Preparation

  1. Cook the lamb loin chops on the grill for 4-5 minutes on each side and then rest.
  2. Add the chopped avocado to the avocado green goddess.
  3. Sauce the lamb with the avocado green goddess.
  4. Finish with feta and peas.
  5. Garnish with watercress and mint.
