Ingredients
- 600g Poached and sliced high welfare chicken breast
- 2 Tbsp plain mayonnaise
- 2 Whole Australian avocados
- 4 Finger limes
- 1/4 Bunch dill
- 1/2 Bunch chives
- 2 Tbsp olive oil
- 1 Tbsp lime juice
- 1 Bunch broadleaf rocket
- 4 Generously buttered sourdough ciabattas
Preparation
- Slice finger limes lengthwise and squeeze the pearls into a small bowl.
- Finely dice dill and chives and add to the finger lime.
- Add olive oil and lime juice, season with salt and pepper and stir to combine.
- Cut open the Australian avocados and remove the stones. Whilst still in the skins and using a serrated knife, cut the avocado into 2cm cubes.
- Using a dessert spoon, scoop out the avocado into the bowl with the finger lime dressing and mix to combine, being careful not to smash the avocado too much.
- Spoon onto buttered ciabattas a single layer of the avocado mix, top with sliced chicken, mayonnaise and broadleaf rocket.
