Ingredients
- 2 Australian avocados
- 4 bagel
- 6 tbsp cooked white crab meat
- 4 tbsp mayonnaise
- 1 lemon
- 1 tbsp of capers
- 1 small red onion
- Half a tsp sweet paprika
- 2 tbsp parsley (coarsely chopped)
Preparation
- Slice the onion into rings. Squeeze a little lemon over the onion to quick pickle.
- Peel the avocado, remove the stone and thinly slice.
- Season with salt, pepper, lemon and olive oil.
- Fold the crab meat into the mayonnaise and season with parsley, paprika, lemon zest, and capers.
- Toast the bagel season with olive oil. Top with avocado and crab.
- Spoon over the pickled onion rings and garnish with a little more parsley and paprika.
