  • Thinly sliced avocado adds an inviting vibrant fresh layer to the bagel 
  • Avocado enhances the sweetness of the crab and balances the tangy pickled onions 
  • Avocado adds essential healthy bats, fiber and vitamins making the bagel more wholesome and satisfying 

Ingredients

  • 2 Australian avocados
  • 4 bagel
  • 6 tbsp cooked white crab meat
  • 4 tbsp mayonnaise
  • 1 lemon
  • 1 tbsp of capers
  • 1 small red onion
  • Half a tsp sweet paprika
  • 2 tbsp parsley (coarsely chopped)

Preparation

  1. Slice the onion into rings. Squeeze a little lemon over the onion to quick pickle.
  2. Peel the avocado, remove the stone and thinly slice.
  3. Season with salt, pepper, lemon and olive oil.
  4. Fold the crab meat into the mayonnaise and season with parsley, paprika, lemon zest, and capers.
  5. Toast the bagel season with olive oil. Top with avocado and crab.
  6. Spoon over the pickled onion rings and garnish with a little more parsley and paprika.
